What's For Dinner...Korean BBQ Beef Lettuce Wraps




One of our favorite things to have for a meal in our house is some version of a lettuce wrap, whether it have a mexican, korean, or thai flare.  They are similar to a burrito or fajita in that Tice and I can both make ours just how we like them by changing the amount of the different fillings up!  I made a version this week that is one of our favorites, my Korean BBQ Beef Lettuce Wraps.


Korean BBQ Beef Lettuce Wraps

Ingredients for the Beef Mixture/Filling:

1 pound of ground beef
1 container of white mushrooms, diced
1 onion (red, white, yellow...it doesn't matter), diced
2 Tbls fresh grated ginger
2 Tbls fresh minced garlic
1/4 cup low sodium soy sauce
1/4 cup rice wine vinegar
1 pinch of red pepper flakes or more to taste

Wrap Making Ingredients:

1 head of iceberg lettuce, leaves separated
1 carrot, thinly sliced
1 cucumber, thinly sliced
2 oz of cooked and drained rice noodles (we like the thin ones over the wide ones)
Crunchy rice noodles
Hot sauce
Cilantro
Green Onions


Brown the ground beef in a large skillet.  Once the meat is browned add in the diced mushrooms and onion.  Cook those together until the ingredients are tender then add in the remaining filling ingredients and let simmer until the sauce is reduced.
