What's For Breakfast... Pumpkin Pie Quinoa

Sawyer loves quinoa so yesterday morning I decided to create something that used it and was inspired by the cooler weather we have been having around here and I named it Pumpkin Pie Quinoa.  It was really good, he ate his so fast he wanted some of mine!

Pumpkin Pie Quinoa

Serves 2
5 WW PP+
1/2 cup uncooked quinoa
1 tsp pumpkin pie spice
Pinch of kosher salt
3 Tbps Pumpkin Puree
1 cup plain unsweetened almond milk
1 Tbps Torani Syrup, Carmel, Sugar Free

Rinse and drain the quinoa then place all ingredients into a small sauce pan and bring to a boil.  Once the mixture comes to a boil turn the heat down to low and cover.  Cook the mixture on low for 15 to 20 minutes.  Shake a bit more pumpkin pie spice over the top! 

You could also add brown sugar, more milk, and diced apples to the top which would be delish!  Keep in mind that will change the point value.
