In honor of my aunt and uncle's 25th wedding anniversary I decided to make them a coconut cake and add a homemade cake topper honoring the occasion! I used this recipe but instead of just having two layers, I fancied things up a bit and cut each layer in half in order to make a four layer cake. I also toasted half of the coconut that I used on the outside of the cake because I thought the textural different between the two would be nice and it was!
